Ingredients
-
2 small crisp red apples (about 300 g total), such as Gala or Honeycrisp
-
1 tsp lemon juice
-
6 tbsp (96 g) natural creamy peanut butter with no added sugar, such as Smucker's Natural, well stirred
-
1/4 cup (57 g) plain 2% Greek yogurt
-
1/2 tsp ground cinnamon
-
1/4 cup (27 g) slivered almonds
Allergens Contains: Peanuts (peanut butter), milk (yogurt), tree nuts (almonds).
Instructions
-
1
Stir the peanut butter, yogurt, and cinnamon together until smooth and thick enough to hold a peak on a spoon. Chill for 10 minutes while you cut the apples — cold filling grips much better.
-
2
Core the apples and cut each into 8 even wedges. Toss with the lemon juice, then pat the cut sides dry with a paper towel; a wet surface is the main reason the filling slides off.
-
3
Spread about 1 tablespoon of filling on the cut side of one wedge, then press a second wedge on top, skin side out, so the red skin forms the lips and the filling shows in between.
-
4
Press 4 or 5 slivered almonds into the filling along the front edge as teeth. Two mouths is one serving. Serve within an hour, while the apples are crisp and the filling is still cool and firm.
Tip
Assembled mouths hold up for about an hour before the apple browns and the filling softens. Make the filling up to 4 days ahead and keep it in the fridge, then cut and assemble right before serving.
Storage & Food Safety
Refrigerate the filling at 40°F or below and use within 4 days. Assembled bites shouldn't sit out for more than 2 hours. For children under 4, skip the almond teeth, cut the apple into very thin slices, and spread the filling thinly — whole nuts, firm apple chunks, and thick globs of nut butter are choking hazards at that age.
Make It Yours
Nut-free
Use sunflower seed butter in the filling and roasted pepitas as the teeth. Protein and fiber stay about the same, and it removes peanuts and tree nuts — useful for school parties.
Dairy-free
Skip the yogurt and use 7 tbsp peanut butter. Protein holds steady at about 9 g and it adds about 15 calories per serving.
Lower-carb
Serve one mouth per person with celery sticks for the leftover filling. Drops about 4 g net carbs and 4 g of total sugars per serving.
If you don't like peanut butter
Almond butter works the same way, with nearly identical protein and slightly more fiber. It turns this into a tree-nut-only recipe.
