Frozen Greek Yogurt Bark with Berries, Pistachios & Cacao Nibs

A slab of vanilla Greek yogurt with a peanut butter ripple, frozen hard, then cracked into shards you eat out of hand like a bar of chocolate. Sliced strawberries and blueberries freeze into it like stained glass; pistachios and cacao nibs give it crunch and a bitter edge. Ingredients

  • 2 1/2 cups plain 2% Greek yogurt
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 2 tablespoons natural peanut butter
  • 1 cup strawberries, hulled and sliced about 1/4 inch thick
  • 1/2 cup blueberries
  • 1/3 cup shelled unsalted pistachios, roughly chopped
  • 2 tablespoons cacao nibs (or finely chopped 85% dark chocolate)
  • Optional: flaky salt for the top

Instructions

  1. 1 Line a rimmed baking sheet (about 9 by 13 inches) with parchment, leaving a little overhang on two sides so you can lift the bark out later.
  2. 2 Stir the yogurt, vanilla, and pinch of salt together in a bowl until smooth. Spread it over the parchment in an even layer about 1/2 inch thick — thinner than that and the pieces snap too small; thicker and they're hard to bite.
  3. 3 Warm the peanut butter in the microwave for 15 to 20 seconds, until it's loose enough to drizzle. Spoon it over the yogurt in thin lines, then drag a knife tip through a few times to make swirls.
  4. 4 Press the strawberry slices and blueberries into the surface, cut-side down, so they're half-submerged and won't fall off once frozen. Scatter the pistachios and cacao nibs over everything and press gently so they stick. Finish with flaky salt if using.
  5. 5 Freeze uncovered at least 4 hours, until completely firm and the center doesn't give when pressed. Lift the slab out by the parchment and break it into 8 roughly equal pieces with your hands. Eat within a few minutes of taking it out — it softens fast.
Meal Prep Tip

Store the broken pieces in a zip-top bag or lidded container in the freezer for up to 1 month, with parchment between layers so they don't fuse. The berries get icy rather than soft over time, which most people like; the pistachios stay crunchy throughout.

Make It Yours

Dairy-free

Use an unsweetened, thick plant yogurt (soy or a Greek-style almond). Most cost about 6 g of protein per piece, so add 2 tablespoons of hemp seeds to the mix to keep the protein close to the original.

Nut-free

Swap the peanut butter for sunflower seed butter and the pistachios for toasted pumpkin seeds. Flavor shifts a little toward toasty, nutrition stays within a gram of the original.

Heartier (more protein)

Stir 1/4 cup unflavored whey or plant protein into the yogurt before spreading. Raises protein to about 13 g per piece and makes the bark slightly firmer and chewier when frozen.

Keto

Use raspberries in place of the strawberries and skip the blueberries. Brings net carbs to about 5 g per piece, inside the keto limit, and the raspberries' tartness pairs well with the cacao.

If you want it sweeter

Add 1/2 teaspoon of monk fruit or allulose to the yogurt, or — the better option — use the ripest in-season berries you can find and let the vanilla and salt do the rest.
