Zest of 1 lemon, plus 1 teaspoon juice

4 slices dense seeded whole grain or rye bread (about 1 1/2 oz each)

Heat the oven to 425°F. Toss the berries with the olive oil and cinnamon on a small rimmed sheet pan and roast 12 to 15 minutes, until they have slumped, darkened at the edges and released a syrupy juice that pools around them. Frozen berries take closer to 18 minutes and give off more liquid, which is fine.

While they roast, toast the walnuts in a dry skillet over medium heat for 3 to 4 minutes, shaking the pan often, until they smell nutty and look a shade darker. Tip them onto a plate straight away, since they keep cooking in a hot pan.

Whip the ricotta, Greek yogurt, lemon zest, vanilla and salt in a bowl with a whisk or hand mixer for about 60 seconds, until the grainy texture disappears and it turns smooth enough to hold a soft peak on the whisk. This step is the difference between a spread and a smear.

Toast the bread until it is firm and dry all the way through, not just golden on the surface. Soft toast collapses under the ricotta within a minute.

Spread the whipped ricotta thickly over each slice, spoon the roasted berries and their juice over the top, then scatter on the walnuts and flaxseed. Add the lemon juice and mint and taste; if the berries were underripe, a little more lemon does more for them than sugar would.
