1 red bell pepper, diced

1 chipotle pepper in adobo, minced, plus 1 teaspoon of the sauce

1 (15 oz) can black beans, rinsed and drained

3/4 cup plain 2% Greek yogurt

3 tablespoons lime juice, divided (about 2 limes)

1 avocado, sliced

Heat the oven to 425°F. On a sheet pan, toss the sweet potato with 2 teaspoons of the oil, half the smoked paprika, and a pinch of the salt. Spread it so the cubes don't touch and roast 25 to 30 minutes, flipping once, until the edges are deeply browned and a fork slides through.

Meanwhile, heat the remaining oil in a large skillet over medium-high. Add the turkey and cook 5 to 6 minutes, breaking it up, until no pink remains and the turkey reaches 165°F on an instant-read thermometer; the bits on the bottom of the pan should start to brown. Add the onion and bell pepper and cook 4 minutes more, until softened.

Stir in the garlic, chili powder, cumin, oregano, remaining paprika, and half the minced chipotle; cook 1 minute, until fragrant. Add the beans and 1/4 cup water, scrape up the browned bits, and simmer 3 to 4 minutes, until the liquid is mostly gone. Stir in 1 tablespoon of the lime juice.

Whisk the yogurt with the adobo sauce, the rest of the chipotle, the remaining 2 tablespoons lime juice, and a pinch of salt. Loosen with a teaspoon of water if you want it to drizzle.

Divide the romaine among 4 bowls and top each with about 1/2 cup sweet potato, a quarter of the turkey and beans, and sliced avocado. Spoon on the crema, scatter with pepitas and cilantro, then taste and add the last of the salt or another squeeze of lime.
Meal Prep Tip
The turkey and beans, sweet potato, and crema keep 4 days in separate containers. Reheat the turkey and sweet potato, but add the romaine and avocado only when you eat so the greens stay crisp and the avocado doesn't brown.
Make It Yours
Vegetarian
Replace the turkey with 8 oz crumbled extra-firm tofu, browned in the skillet, plus a second can of black beans. Protein drops to about 27 g and net carbs rise by roughly 7 g per bowl.
Dairy-free
Make the crema with unsweetened plain coconut or almond yogurt. Costs about 4 g protein per bowl; a tablespoon of hemp seeds on top brings most of it back.
Lower-carb
Swap the sweet potato for roasted cauliflower and halve the beans. Cuts about 17 g net carbs per bowl, landing near 12 g and inside low-carb range.
Heartier
Add 1/2 cup cooked brown rice or quinoa per bowl on active days. Adds about 20 g net carbs, which takes the bowl past the complex-carb target, so keep it for days you need the fuel.
Lower-sodium
Use no-salt-added black beans and skip the salt in the turkey. Brings sodium to roughly 400 mg per bowl; extra lime and cumin keep it lively.
If you don't like sweet potato
Roast butternut or delicata squash instead, on the same timing. Squash carries about 4 g fewer net carbs per half cup.
